SWEET FIG PRESERVE

INGREDIENTS
For 1 kg of male figs, we need 2 kgs of sugar, 4 glasses of water and the juice of one lemon.
 


INSTRUCTIONS
We take the figs one by one, remove their stems and with a pointy knife we open a hole (the size of a lentil) at the bottom of each fig.
Then, we use a skewer to make a hole from the bottom towards the stem (an opening from side to side to the syrup in)
We fill up a pot with water. As soon as the water comes to a full boil we add the figs and let them boil for a half an hour.
When the figs become softer, we take them out of the pot and put them in another pot filled with cold water and then we change their water approximately every hour (with tap water - not hot). Then we spread them one by one on a towel to dry for 12 hours.
We prepare the syrup (sugar and water at a low heat for approximately 15').We add the figs and bring to a boil for approximately 1 hour.
