LAMB IN THE OVEN WITH PISTACHIO CRUST

INGREDIENTS FOR THE CRUST

3 tablespoons of soft butter, 6 tablespoons of ground pistachios, 1 cup of lamb broth from the roast, 3 tablespoons of breadcrumbs, 3 dessert spoons of honey or sugarless strawberry marmalade.

INSTRUCTIONS
Mash all herbs and spices of your choice together with the olive oil and a little bit of water, smear the mix on the lamb and cook the meat in the oven for 2 – 2,5 hours. You can also add just a pinch of garlic. Cover with foil paper to prevent the roast from becoming too dark or crispy. Make the paste for the crust by mixing all the ingredients together. Once roasted, cut the meat into servings and cover it with the paste you just made. Put in the  the grill for 10 minutes or until the paste becomes a crust.
